Who doesn’t love pancakes for breakfast? These delicious goodies have been a staple in many homes for years because they’re filling, easy to customize for picky eaters, and they can even be really easy to make if you get your batter done up in advance. I love all things bread – and pancakes are a great way to get the comfort in a variety of fin ways.
I am a big fan of making things in advance and taking full advantage of my freezer. Pancake batter is one of those things that can be created in bulk, stored in a canning jar or storage bag, and put in the freezer for one of those days when pancakes are the only thing that will put a smile on everyone’s face. Since creating a really nice collection of vegan pancake recipes, I’ve become an even bigger fan!

5-Minute Vegan Pancakes
This is the essential alternative to quick mixes. It’s super easy to make, requires just basic ingredients, and it can be made in advance and frozen if needed. You also have some room to play here as far as flour, sugar, and nut milk go – so feel free to try your favorite alternatives in cases where gluten or refined sugar can’t be used.
Fluffy Vegan Pancakes
These are the most decadent and heavy pancakes I’ve found yet. For those people who love a thick cake that can be doused in agave, maple syrup, or preserves – this one’s for you!
Gluten-Free Vegan Pancakes
If your family avoids gluten, this is the recipe for you. The reviews on this one are amazing and the photos make me want to create them right now! These are highly customizable and could be served with all kinds of berries.
Gluten-Free, Dairy-Free Pancakes
Here’s another amazingly creative recipe that leaves out the gluten and the dairy. This one is no-nonsense and uses ingredients that are less exotic or hard to find than many of the gluten-free recipes you’ll find out there. This recipe also created a cake that’s more traditional in appearance and texture, so it could be a good one to use as you train your family into eating gluten free.
